Pumpkin Chocolate Chip Cupcakes (Great Harvest Pumpkin Chocolate Chip Bread Recipe)

Pumpkin Chocolate Chip Cupcake

2 1/2 cups white all purpose flour

1 cup whole wheat flour

3 cups sugar

2 tsp. baking soda

2 tsp. cinnamon

1 tsp. nutmeg

1 tsp. salt

16 oz. canned pumpkin puree

1 cup oil

4 eggs, beaten lightly

2/3 cup water

1 cup semi sweet chocolate chips

chocolate frosting (for decorating)

candy corns (for decorating)

orange frosting in tube (for decorating)

Preheat oven to 350 degrees F. Line muffin tins with cupcake papers.

Mix flours, sugar, baking soda, cinnamon, nutmeg, and salt together in a large bowl; set aside.

Mix pumpkin, oil, eggs, and 2/3 cup water together and stir into dry ingredients. Stir in chocolate chips.

Drop about a 1/4 cup of batter into each cupcake paper. Bake for about 30 min. or until a toothpick comes out clean. Makes about 24 cupcakes. Decorate and serve these delicious halloween party appetizers!

Enchanted Witch Hats

Round, chocolate cookies

Chocolate kisses

Orange frosting in tube (for decorating)

Place cookies, chocolate side up, on a serving tray. Blob a bit of orange frosting in the center of each cookie and place the kisses on top to secure them. Line the kiss with orange frosting to make a ribbon. serve these halloween party appetizers at your next costume party!

Minty Monster Mousse Cups

Scary Appetizers Minty Monster Mousse Cups

Clear, plastic cups (the size of your choice)

1/4 cup chocolate morsels

2 cups vanilla pudding

2 cups Cool Whip

1 tsp. mint extract

Green food coloring

1 cup crushed chocolate cookies

Melt chocolate morsels in the microwave for about 15 to 30 seconds. Paint on monster faces on the inside of each plastic cup. Place cups in the fridge to set the chocolate.

Mix pudding, Cool Whip, and mint extract. Stir in about 10 small drops of green food coloring into the mixture.

Fill up each plastic cup with the minty mousse and top with crushed cookies. Makes about 4 servings if you are using 12 oz. cups. Chill until you are ready to serve these scary appetizers!

Graveyard Cakes

Pre-sliced pound cake (or any cake in shape of headstone)

Cool Whip

Black food coloring

Black frosting in tube (for decorating)

Crushed chocolate cookies

You can prepare this dish on small individual plates (shown), or set up a whole serving tray as the "graveyard".

Spread a thick layer of Cool Whip on each plate. Sprinkle with crushed cookies.

Mix a few drops of black food coloring into the cool whip until you get a nice gray color. One by one, slather each pound cake piece with the gray cool whip. Stand the "headstones" on the plates by nestling them into the cool whip. (If they need to be propped up you can put a few small pieces of pound cake behind them).

Using the black frosting in the tube carefully write "R.I.P." on each "headstone". Place plates in the fridge or freezer until you are ready to serve them. These Halloween party appetizers will be the talk of the town!
