Thanksgiving Appetizers
No other holiday is more about food than Thanksgiving. Of course it is also about being with family and friends, but the food really brings it all together.
Thanksgiving appetizers can be tricky because if you are serving them on Thanksgiving Day then you do not want items that will fill up your guests. You want them to save room for the turkey and stuffing!
Here are some of my favorite Thanksgiving holiday appetizers that will open the appetite and not be overfilling. Most of these recipes use enticing fall themed ingredients to get your appetite ready for the big meal.

Lemon Pepper Popcorn

1 package microwave popcorn (natural flavor)
Pam Cooking Spray
Lemon pepper seasoning to taste
Follow instructions on the bag and pop the popcorn. Place about 1/3 of the popcorn in a large bowl. Spray lightly with the cooking spray and immediately sprinkle with the lemon pepper seasoning. Continue with the rest of the bag until all the popcorn is evenly seasoned and in the bowl. Serve and enjoy!
Cucumber and Cherry Tomato Kabobs with Feta

1 cucumber
12 cherry tomatoes
5 ounces feta cheese in block form
1 package of wooden toothpicks
2 cloves garlic finely chopped
4 Tbsp olive oil
4 Tbsp fresh lemon juice
Cut the cucumber into small wedges. Cut the cherry tomatoes in half. Cut the feta cheese into cubes about the size of the cherry tomato halves.
Place one cucumber wedge, one cherry tomato half, and one cube of feta cheese on each toothpick. Continue until all pieces have been skewered. Lay out finished skewers on a serving platter.
Wisk together the garlic, olive oil, and lemon juice in a small bowl. Drizzle the dressing over the skewers and serve! Makes about 24 skewers.
Black Bean and Corn Salsa

2 large tomatoes diced
1 medium purple onion finely chopped
1 can of corn drained
1 can of black beans drained and rinsed thoroughly
Juice of 3 or 4 limes
1/4 cup cilantro finely chopped
1 tsp salt
Mix all ingredients in a large bowl and chill. Serve with tortilla chips or toasted bread.
Low Carb Thanksgiving Appetizers
Apple and Sausage Appetizers

1 summer sausage
2 small red apples
Fresh lemon juice
Ice bath
Package of wooden toothpicks
Cut summer sausage and apples into equally sized, bite sized wedges. Mix lemon juice into an ice bath and submerge the apples. Before guests arrive take apples out of the bath and pat dry.
Assemble skewers by placing one sausage wedge and one apple wedge on a toothpick. Continue until all pieces are used up. Serve and enjoy! Makes about 32 skewers.
Veggies and Creamy Chipotle Dip

1/2 cup sour cream
1/2 cup cream cheese
1 whole chipotle (from can)
1 tsp chipotle sauce (from can)
Salt and pepper to taste
Blend all ingredients in blender or food processor. Chill overnight and serve with veggies of your choice!
