Ricotta Apricot Halves

These ricotta apricot halves are sweet bites that will be a surprise sensation. I love the taste of these broiled apricots topped with brown sugar. The ricotta cheese adds the perfect amount of creaminess, and the fresh mint on top pops with color and flavor.

8 apricots (about 1 pound), halved and pitted

4 teaspoons light-brown sugar

1/2 cup ricotta cheese

2 Tbsp chopped fresh mint

Place apricots, cut side up, on a foil covered baking sheet. Sprinkle with brown sugar. Broil until apricots just begin to char about 2 to 5 min. Cool. Fill each halve with equal amounts of ricotta cheese and garnish with mint.
