Bruschetta Recipe

Roasted garlic is the key ingredient in this bruschetta recipe. Bruschetta is a traditional Italian appetizer that is typically a few savory ingredients on toasted bread. I’ve kept things simple and combined roasted garlic with fresh tomatoes and basil. I absolutely love roasted garlic so I wanted to make sure that it was the star of this appetizer recipe. Roasted Garlic and Tomato Bruschetta

1 white baguette

1/4 cup olive oil

2 heads of garlic roasted cooled and finely chopped (recipe follows)

2 roma tomatoes finely chopped

1 Tbsp + 1 tsp fresh basil chopped

1/4 tsp salt

2 tsp olive oil

Preheat oven to 375 degrees F. Cut loaf in half long ways as if you were making a giant sandwich. Cut 2 to 3 inch pieces out of each half. Arrange the bread slices on a baking sheet. Brush with the 1/4 cup olive oil. Bake for 15 min. or until light and golden.

Toss roasted garlic, tomatoes, basil, salt, and olive oil in bowl until everything is incorporated. Spoon an equal amount of mixture onto the toasted bread and serve.


Roasted Garlic Recipe

2 whole heads of garlic

4 tsp olive oil

Preheat the oven to 400 degrees F. Peel off the outer layers of the garlic bulb skin, but leave on the skins of the individual cloves. Cut the top 1/4 inch off the top of garlic head exposing just the first part of each garlic clove.

Place each head in the center of its own piece of aluminum foil. Drizzle 2 tsp olive oil over each head, fully coating the garlic. Wrap foil around each garlic head so they are completely covered.

Place aluminum balls directly on the center oven rack. Bake at 400°F for 20 to 30 minutes, or until the cloves feel soft when pressed. Remove each clove from their skins and they are ready to use!
