Guacamole Recipe
You are going to love this guacamole recipe! Guacamole is a hugely popular creamy dip and though great accompanying Mexican dishes it is also perfect on its own as an appetizer. The basic dip has just three ingredients so you can make it in a flash. The other recipe adds a few more ingredients to give the dip more levels of flavor. I use these recipes for dipping because the high lime content goes great with salted tortilla chips. When I make guacamole to top quesadillas, enchiladas, or tacos I will cut the lime at least in half so it doesn’t take away from the other flavors in the dish. After guacamole chills completely the seasonings can change. That is why you will probably want to add a little bit more salt in the end. Pick good sized ripe avocados that are just a little bit soft to the touch. To peel simply cut in half long ways, pop out the seed with a spoon, and scoop out the soft green part into your bowl. The below ratio works out great and it makes the recipe easy to multiply to accommodate the size group you will be serving.
Basic Guacamole Dip 1 medium avocado peeled and pitted Juice of 1 lime 1/4 tsp salt Mash all ingredients together until smooth and chill completely. Add more salt if needed.
Guacamole Dip1 medium avocado peeled and pitted Juice of 1 lime 1/4 tsp salt 2 tsp. chopped onion 2 – 3 Tbsp chopped tomato 1 tsp. chopped cilantro 1/2 tsp. garlic powder Mash avocado, lime, and salt together until smooth. Mix in onion, tomato, cilantro, and garlic powder. Chill completely. Add more salt if needed.
