Stuffed Cherry Tomatoes
Stuffed cherry tomatoes are another healthy appetizer choice. The freshness of this appetizer makes these little tomatoes so delectable. You can really stuff them with anything you choose, but I love the combination of tomatoes, cottage cheese, garlic, and basil. The flavors and colors can’t be beat. Serve this refreshing and cool appetizer at your next party. 
Cherry Tomatoes Stuffed with Cottage Cheese and Herbs 2 pints cherry tomatoes (about 48 cherry tomatoes) 1 1/4 cup cottage cheese 1/8 tsp. garlic powder 1/2 teaspoon dried basil leaves 1/2 tsp black pepper Use a very sharp knife to cut the top off each cherry tomato. Using 1/4 tsp or small melon baller carefully scoop out seeds and pulp. Cut off a tiny sliver on the bottom of each tomato so they have a flat area to rest on and don’t roll around. Rinse each tomato to get any remaining seeds and drain upside-down on a paper towel. Combine the rest of the ingredients in a bowl and fill each cherry tomato with the mixture. Chill in the fridge for a few hours and serve.
