2 1/2 pounds chicken wings

Salt and pepper

1 1/2 cups all purpose flour

Cooking oil

6 ounces Tabasco Sauce

1/2 cup melted butter

Fill large heavy frying pan with 1 inch of oil. Turn to medium heat and allow to heat up. To test oil place small fresh piece of bread in oil and if it turns brown in 45 seconds the oil is ready (about 365 degrees F.)

Season both sides of wings with salt and pepper. Very lightly dust the wings with flour and place in hot oil. Cook on each side until the chicken is completely cooked, crispy, and golden (about 8 to 12 min. on each side).

Remove wings and drain on paper towel.Mix Tabasco Sauce and melted butter in large bowl and add wings. Completely coat each wing with sauce. Serve up these spicy wings immediately.

Bacon and Cheddar Potato Skins

12 mini yellow potatoes washed and cut in half lengthwise

1 1/2 Tbsp olive oil

1 tsp salt

1 cup finely grated cheddar cheese

4 slices of crispy cooked bacon crumbled

1/2 cup sour cream

4 tsp chopped green onion or chives

Preheat oven to 450 degrees F. Coat potatoes in olive oil and place cut side down on a foil covered baking sheet. Sprinkle with salt and bake for about 15 minutes or until fork is easily inserted.

Remove from baking sheet for faster cooling. Once cooled use a 1/4 teaspoon and scoop out the inside of each potato. Do not scoop out too much. Leave a thin layer all around the potato skin.

Place potatoes back onto baking sheet and fill each cavity with equal amounts of cheese. Sprinkle bacon crumbles over the cheese. Bake for about 2 to 4 minutes on 450 degrees F. or until the cheese is completely melted.

Cool for about 10 minutes and top with sour cream and green onions. Serve immediately and enjoy these super bowl snack ideas!

Guacamole Dip

1 medium avocado peeled and pitted

Juice of 1 lime

1/4 tsp salt

Mash all ingredients together until smooth and chill completely. Add more salt if needed.

1 lb. mozzarella cheese cut into 1/2 inch X 3 1/2 inch sticks

1/4 cup white flour

4 eggs beaten

1 1/2 cups bread crumbs seasoned with 3 tsp chili powder, and

salt & pepper to taste

Cooking oil

Fill large heavy frying pan with 1 inch of oil. Turn to medium heat.

Prepare dredging station next to the fry pan placing bread crumbs closest, then egg, then flour. 8X8 glass pans work best for this process.

Test oil: Place small fresh piece of bread in oil and if it turns brown in 45 seconds the oil is ready (about 365 degrees F.)Completely cover cheese sticks with each dredging ingredient. First, dust with flour; then dip in egg, and lastly roll in bread crumbs.

Place covered cheese sticks in oil and repeat until the pan is full but none are touching. Cook on one side until deep golden brown and turn with tongs. Cook on the other side until golden brown and remove to drain on paper towels.

Repeat process until all the cheese is cooked. Serve these super bowl snack ideas with marinara sauce or other favorite dipping sauce.


7 Layer Dip

16 ounces refried beans

1 tsp salt

1 Tbsp salsa

1 cup guacamole

1 cup sour cream

1 cup salsa

1 cup cheddar cheese finely grated

1 cup sliced black olives

1 cup chopped fresh tomatoes

Combine beans, salt, and Tbsp salsa in large bowl. Stir until light and easy to spread. Scoop beans in center of 9”X13” glass dish. Spread them evenly to the edges. Do the same with guacamole and sour cream. For salsa, drop spoonfuls right along the edges of the pan on top of the sour cream and then in center. Spread evenly over the sour cream. Sprinkle cheddar cheese evenly over the top of the salsa (should completely cover salsa), then olives, then tomatoes. Chill completely before serving this super bowl snack idea.
