Tapenade Recipe

This exquisite tapenade recipe is an excellent appetizer choice. Tapenade is a French olive paste with capers that is known for its salty and rich flavor. It is best on plain crackers or bread. I chose to use both green and black olives in this recipe as I am a huge fan of each. I also used fresh parsley as the herb, but your favorite fresh herb will do just fine. This recipe is easiest made in a food processor, but if you only have a blender that is fine too. You will have to pulse it and push the ingredients down constantly with a spoon. This gourmet spread compliments wine wonderfully.

Tapenade recipe using green and black olives.

Green and Black Olive Tapenade

2 Tbsp olive oil

1 anchovy filet

2 cloves fresh garlic

2 heaping Tbsp fresh parsley (or other fresh herb)

1 Tbsp capers

1 Tbsp fresh lime juice

1 cup green olives

3/4 cup black olives

Black pepper to taste

Blend all ingredients in food processor or blender until fully mixed, but with a coarse texture. Spread on crackers or bread.
