Fruit and Cheese Board
Pairing with white wine such as Sauvignon Blanc:
Stick with light creamy cheeses that are not aged too much such as Mozzarella, Gouda, Brie, and Goat Cheese.
Pairing with red wine such as Cabernet Sauvignon and Pinot Noir:
Use hard and aged full flavored cheeses such as aged Cheddar, Parmigiano-Reggiano, and aged Asiago.

Roasted Garlic and Tomato Bruschetta
1 white baguette
1/4 cup olive oil
2 heads of garlic roasted cooled and finely chopped (recipe follows)
2 roma tomatoes finely chopped
1 Tbsp + 1 tsp fresh basil chopped
1/4 tsp salt
2 tsp olive oil
Preheat oven to 375 degrees F. Cut loaf in half long ways as if you were making a giant sandwich. Cut 2 to 3 inch pieces out of each half. Arrange the bread slices on a baking sheet. Brush with the 1/4 cup olive oil. Bake for 15 min. or until light and golden.
Toss roasted garlic, tomatoes, basil, salt, and olive oil in bowl until everything is incorporated. Spoon an equal amount of mixture onto the toasted bread and serve.
Roasted Garlic Recipe
2 whole heads of garlic
4 tsp olive oil
Preheat the oven to 400 degrees F. Peel off the outer layers of the garlic bulb skin, but leave on the skins of the individual cloves. Cut the top 1/4 inch off the top of garlic head exposing just the first part of each garlic clove.
Place each head in the center of its own piece of aluminum foil. Drizzle 2 tsp olive oil over each head, fully coating the garlic. Wrap foil around each garlic head so they are completely covered.
Place aluminum balls directly on the center oven rack. Bake at 400°F for 20 to 30 minutes, or until the cloves feel soft when pressed. Remove each clove from their skins and they are ready to use!
Green and Black Olive Tapenade
2 Tbsp olive oil
1 anchovy filet
2 cloves fresh garlic
2 heaping Tbsp fresh parsley (or other fresh herb)
1 Tbsp capers
1 Tbsp fresh lime juice
1 cup green olives
3/4 cup black olives
Black pepper to taste
Blend all ingredients in food processor or blender until fully mixed, but with a coarse texture. Spread on crackers or bread.
Nuts and Dried Fruit
1/4 cup walnut halves
1/4 cup whole almonds
1/2 cup mixed dried fruit
Mix walnut halves and whole almonds together. Place them on one side of serving dish or in a small bowl. Place fruit on the other side of the serving dish or in another small bowl. Serve them together at your next wine tasting party.
Smoked Salmon Toasts
1 package Melba toasts
1 small container cream cheese
1 package smoked salmon
Red Onion sliced
Lay out crackers on serving tray, and spread each with an equal amount of cream cheese. Remove salmon from packaging and cut into thin strips. Place one strip on each cracker in the shape of a squished “S”. Press a few capers into the expose cream cheese and top with a small slice of red onion. Garnish with fresh dill if desired. Keep in refrigerator and serve wine tasting appetizer within 15 to 20 min.
